For over a year now I have been sharing some of my favorite cupcake recipes with the world. In that time I was asked why I keep making the red velvet cupcakes over and over again, so I thought I would take a moment to explain.
Red Velvet Cupcakes! Love them or hate them, you’ve probably heard of them. I think the differences between red velvet and traditional recipes are subtle enough that it’s hard to go wrong making these cupcakes. My favorite variation is the cream cheese frosting. It’s very rich and delicious. And of course, it’s red!

How to make Baileys Red Velvet Cupcakes
Preheat the oven to 350°F. Line a standard muffin tin with muffin cups. Sift the flour and salt into a bowl and set aside. Put the butter in the mixing bowl (or use an electric hand mixer). Beat on medium speed until fluffy. Add the sugar and beat on medium speed until the mixture is complete. Add the egg and whisk over low heat. Add the red food coloring, vanilla extract and cocoa powder to the bowl. Mix over low heat until everything is combined. Put half of the flour mixture in a bowl and slowly pour in half of the milk, whisking until well mixed.
Scrape the sides of the bowl clean, then add the rest of the flour and milk. Beat until the mixture is complete. In a small bowl, mix the apple cider vinegar and baking soda until dissolved. Add them to the batter and mix on low until everything is well blended. Finally, add the Baileys Red Velvet and stir until smooth. Fill each cavity of the muffin tin two-thirds full with batter. Bake muffins 16 to 18 minutes (check after 15 minutes) or until a toothpick inserted into the center of the muffin comes out clean. Place the sheet on a wire rack and allow to cool completely.
For glazing
Place the butter, cream cheese and vanilla extract in the bowl of a mixer (or use an electric hand mixer). Beat on medium-high speed until smooth. Slowly add the powdered sugar until the mixture is smooth. Then beat on high speed for 3 to 5 minutes. Add the Baileys Red Velvet and mix on low speed until everything is combined, then beat on high speed for another minute. - 1 1/4 tablespoons cocoa powder cocoa powder
- 3/4 cup whole milk (room temperature)
- 3/4 teaspoon sieved baking powder
- 3/4 teaspoon apple cider vinegar
- 2 tablespoons Baileys Red Velvet
For glazing:
- 3 ounces unsalted butter (room temperature)
- 1 cup cream cheese (room temperature)
- 1/4 teaspoon pure vanilla extract
- 6 cups sieved icing sugar
- 2 tablespoons Baileys Red Velvet
Instructions
- Preheat the oven to 350°F. Line a standard muffin tin with muffin cups.
- Sift the flour and salt into a bowl and set aside.
- Put the butter in the mixing bowl (or use an electric hand mixer). Beat on medium speed until fluffy. Add the sugar and beat on medium speed until well blended.

- Finally, add the Baileys Red Velvet and stir until smooth.
