- ½ teaspoon cayenne pepper

Method
- Toast the coconut, cayenne, cumin seeds, coriander seeds and garam masala in a dry skillet over medium-high heat.
- Cook until the spices are fragrant, this will take about 2 to 3 minutes. Remove from heat and set aside to cool.
- Grind the remaining ingredients in a mortar and pestle to a smooth paste.
- Mix the toasted spices with the noodles until fully combined.
- Use immediately or store in the refrigerator until use.

- Add a little water to the dough if it seems too dry.
- Keep a close eye on the pan so the spices don’t burn.
- If you don’t have whole cumin and coriander seeds, use ground spices.
